Shrimp fried rice is one of my go- to dishes when it comes to ordering Chinese take-out. My recipe is made with succulent shrimp, egg and vegetables. It’s also highlighted with Asian flavors like soy sauce and oyster sauce.
What is shrimp fried rice?
A Chinese-inspired dish made with shrimp, eggs and vegetables. This dish is very versatile. Onions, carrots, broccoli, corn and peas are some of the veggies used for this dish. Although, the name is “shrimp fried rice”, the shrimp can be left out, and you’ll have a nice batch of vegetable fried rice. But, that’s another post for another day 🙂
Anyway, let’s back to it. While, you can use whatever veggies you like, I typically use onion, carrots, corn and peas. Also, I garnish with a nice touch of green onions for that last layer of flavor.
How to prepare
There’s several ways to prepare this dish. I have prepared this dish a few ways by cooking the rice in the skillet. Also, I’ve prepared it with cooked rice. I must say, cooked rice is better. Additionally, day old cooked rice is even better. Day old rice has less liquid, which makes frying the rice a lot easier and better. So, trust me when I say, don’t throw out that leftover rice just yet.
Ingredients
- Jumbo or large shrimp – peeled, deveined and tail-off
- Grapeseed oil – to sear shrimp
- Unsalted butter – To sear shrimp, and induce flavor. Be sure to use unsalted to reduce the risk of being too salty.
- Yellow onion – to add flavor
- Shredded carrot – to add an earthy flavor
- Mirin – use to deglaze pan, and add flavor
- Sesame Oil – will add a nutty flavor
- Egg – to add flavor
- Cooked white rice – Day old is better
- Garlic powder – to add flavor
- Soy sauce – adds a umami flavor
- Oyster sauce – brings a sweet and salty accent to the dish.
- Frozen corn and peas – adds texture and sweetness
- Green onion – optional, but recommended
Simple steps
- Sear the shrimp
- Saute onion and carrots
- Deglaze pan with mirin
- Scramble egg
- Add cooked rice
- Season with salt, pepper and garlic powder
- Add soy sauce and oyster
- Toss the cooked shrimp in pan with the other ingredients
- Garnish with green onions.

Shrimp Fried Rice
Ingredients
- 1 lb large or jumbo shrimp peeled, deveined, tail-off
- 2 tbsp. grapeseed oil
- 1 tbsp. mirin
- 1 small or medium yellow onion, diced
- 1 cup shredded carrots
- 2 tsp. sesame oil
- 2 large eggs, beaten
- 3 cups cooked white rice
- 2 tsp garlic powder
- 1/4 cup low-sodium soy sauce
- 1 tbsp oyster sauce
- 1/2 cup frozen peas
- 1/2 cup frozen corn
- 1/3 cup green onion (chopped) for garnish optional
- salt pepper to taste
- 6 tbsp unsalted butter
Instructions
- In a bowl, season shrimp lightly with salt and pepper.
- Heat oil in a large skillet over medium-high heat. Add 2 tbsp. of butter. Add shrimp and cook for 3 minutes, tossing and flipping through process. Remove shrimp and let rest on plate.
- Deglaze pan with mirin.
- Add 4 tbsp. of butter. Once melted, add onion and sauté for 2 minutes. Add carrots and sauté for an additional 3 minutes.
- Reduce heat to medium. Push carrots and onions to edge pan, forming a well in the center. Add sesame oil to the center. Then add eggs. Scramble eggs with carrots and onions for 1 minute.
- Stir in cook rice. Season lightly with salt and pepper. Then, season liberally with garlic powder. Add soy sauce and oyster sauce. Stir contents together and keep stirring until rice is brown in color.
- Add frozen peas and corn. Continue to stir until peas and carrots are warm.
- Add cooked shrimp and toss.
- Garnish with green onion, and serve warm immediately.
