This alfredo sauce is creamy, rich and garlicky. It can easily give the alfredo dish at your favorite restaurant a run for it’s money.
What is alfredo sauce
Alfredo is an Italian sauce made with cream, Italian cheeses and garlic. Traditionally, alfredo sauce is served with fettucine noodles. However over the years, many people have started using whatever type of noodles they like. It’s also normally served with a protein of choice, which is typically chicken, seafood or steak.
How to prepare Alfredo sauce
Some may think that because Alfredo sauce is so delicious, it may take a lot to prepare. However, this sauce is very simple, and it doesn’t call for many ingredients at all. While my recipe is very similar to the traditional way, I do a few things differently.
Ingredients needed for alfredo sauce
- Butter
- Garlic
- White wine
- Heavy Cream
- Parmesan cheese
- Asiago cheese
- Seasonings (salt, pepper, paprika, garlic powder, onion powder)
- Fresh parsley
- Pasta water (optional)
Simple steps
- Melt butter in the pan
- Sauté garlic until fragrant
- Add white wine
- Stir in heavy cream
- Add seasonings
- Bring to a simmer
- Add cheeses. Stir until melted.
- Add parsley.
- NOTE: If sauce is too thick, pasta water can be added to thin it out.
What type of noodles to use
There’s no rule book on what type of noodles to use for your alfredo sauce. With that being said, any type of noodle will work. While, fettucine is traditionally used, other good choices are bow-tie noodles, or even penne. Pretty much any kind of thick noodle. Thick noodle is perfect for soaking up that delicious sauce. Not to mention it enhances that flavor of the sauce.
What type of protein to use
Of course no protein is needed. Alfredo is delicious with only your pasta of choice. However, popular protein choices are shrimp and chicken. Shrimp and chicken is probably the universal proteins of choice. However, my favorite is crab. Yes, crab. I use the meat from snow or king crab legs. I used the legs because that’s where the most flavor resides. Also, if you would like to keep it vegetarian, then mushrooms are a good choice.

Sauteed or steamed shrimp, along with this delicious sauce will accomplish the perfect shrimp alfredo dish.
Crab Cake Alfredo
My crab cake recipe also goes perfect with this sauce. I added a little shrimp, but the crab cake will go good with it by itself.
Alfredo Sauce
Ingredients
- 8 tbsp unsalted butter 1 stick
- 3 garlic cloves, minced
- 1/4 cup dry white wine
- 2 cups heavy cream
- 1/4 tsp sea salt
- 1/4 tsp black pepper
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 1 cup freshly grated asiago cheese
- 1 cup freshly grated parmesan cheese
- 2 tbsp fresh parsley chopped
- pasta water optional
Instructions
- In a large skillet, melt butter over medium heat. Once butter starts to melt, add garlic and sauté until fragrant, approximately 3 minutes. Do not burn garlic.
- Stir in white wine, heavy cream, salt, pepper, onion powder and paprika. Bring to a simmer.
- While sauce is simmering, whisk in asiago and parmesan cheese. Let simmer for additional 5 minutes, or until sauce has started to thicken, stirring occasionally. If you notice sauce is too thick, you may add pasta water to get the consistency you like.
- Stir in parsley. Remove from heat. Taste, and if needed, add more salt. Add cooked pasta, and cooked protein of choice. Toss until noodles and protein is coated.
