What is beef & broccoli?
Beef & broccoli is a very popular dish in Chinese restaurants. It is made with thinly sliced beef, that’s tossed in a delicious sauce, highlighted with Asian flavors.
Type of beef
The best beef to use when preparing beef & broccoli is flank steak. Skirt steak is another good option. The only difference is skirt steak is more fatty than flank, but it’s still a good option.
Ingredients:
- Flank steak – thinly sliced.
- Kosher salt – to bring out the flavor of the beef.
- Worcestershire sauce – adds flavor and also helps tenderize the meat by breaking down the fibers.
- Beef broth – flavorful base for sauce
- Sesame oil – adds a slight nutty flavor
- Soy Sauce – adds salt, but also has a umami flavor; which is popular flavor for Asian inspired dishes
- Crushed red pepper – adds a kick of spice
- Ground ginger – adds spicy and savory notes
- Sugar – helps balance the spicy and savory flavors
- Minced garlic – flavor
- Onion Powder – flavor

How to prepare
One of the things I love about this recipe is the fact that everything can be cooked in one pan, except, the rice of course. Also, the fact that a wok is not required is another plus. Isn’t that great? However, if you have a wok, feel free to use it.
- Season the beef – salt, worcestershire sauce and cornstarch.
- Prepare the sauce – beef broth, soysauce, sesame oil, crushed red pepper, ground ginger, sugar, minced garlic and onion powder.
- Sear beef – Add butter and grapeseed oil to skillet and cook beef until almost cooked thoroughly.
- Add sauce
- Add broccoli – Simmer until broccoli is tender to liking.
- Stir in cornstarch slurry – cornstarch mixed with water to thicken the sauce.
- Return beef to skillet – Simmer for for a few minutes.
Beef & Broccoli
Ingredients
- 1 1/2 lb. flank steak sliced thinly against the grain
- 1 1/2 tsp. cornstarch
- 1 tsp kosher salt
- 1 tbsp. Worcestershire sauce
- 1 cup beef broth
- 1/4 cup low sodium soy sauce
- 1 tsp. sesame oil
- 1/2 tsp. crush rushed pepper
- 1/2 tsp. ground ginger
- 1 tsp. sugar
- 1 tbsp. minced garlic
- 1 tsp. onion powder
- 1 1/2 tsp. cornstarch
- 3 cups broccoli florets
- 2 tbsp. grapeseed oil
- 2 tbsp. unsalted butter
- sesame seeds for garnish optional
Instructions
- In a large bowl, season sliced beef with kosher salt, worcestershire sauce and 1 1/2 tsp. of cornstarch. Mix until thoroughly mixed to together.
- In a small bowl, whisk together beef broth, soy sauce, sesame oil, crushed red pepper, ginger, sugar, minced garlic and onion powder. Set aside.
- Heat a large skillet over medium heat. Add 1 tablespoon of the grapeseed oil and 1 tablespoon of butter. Once it is hot, add the beef. Cook beef in two batches. Cook beef, stiring constantly, until beef is almost cook thoroughly. Use a slotted spoon or spatula to transfer beef to a plate. Add another tablespoon of grapeseed oil, along with another tablespoon of butter. Cook second batch of beef. Transfer to plate with rest of beef.
- In a small bowl or measuring cup, mix 1 1/2 teaspoon of cornstarch with 1/2 cup of water to make a cornstarch slurry.
- Add prepared sauce to skillet, and bring to a simmer. Mix in cornstarch slurry and stir in broccoli and let simmer for 3 minutes, or broccoli's texture is to your liking Return beef to skillet and stir together with broccoli and sauce. Let simmer for an additional 2-3 minutes.
- Serve immediately. Recommend to serve with rice.
