Blueberry Waffles

Sweet and fluffy waffles packed with fresh blueberries

Ingredients
  

  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1/3 cup granulated sugar
  • 3 1/2 tsp baking powder
  • 2 cups whole milk
  • 1 egg
  • 1 tsp vanilla extract
  • 1/3 cup melted butter
  • 1 cup fresh blueberries
  • non-stick cooking spray I use butter flavor
  • powdered sugar for garnishment optional

Instructions
 

  • Turn on waffle iron and heat until ready to cook waffles.
  • In a large bowl, whisk together flour, salt, sugar and baking powder. Make a well in the center of the mixture and pour in milk and add egg. Whisk all ingredients together, until mixture is free of visible lumps. Whisk in vanilla extract and melted butter. Lastly, fold in the blueberries.
  • Spray top and bottom of waffle iron with non-stick cooking spray. Scoop batter out and pour onto waffle iron. Cook waffles for 3 - minutes, until golden brown. Repeat until all waffles are made. With my Belgian waffle iron, I can typically get between 6 - 8 waffles. Serve warm with powdered sugar and/or other toppings of choice.

Notes

Tips and substitutions
  • Frozen blueberries can be used in place of fresh.  If using frozen, let them thaw before folding into batter.
  • Do not put too much batter into waffle iron, as it will start to run over once waffles begin to cook.
  • The blueberries will start to pop during the cooking process, so make sure to keep an eye on the waffle iron for blueberries running out.  Cleaning as you go, will make clean-up a lot easier at the end.
  • This recipe makes between 6 - 8 Belgian waffles. If using a standard size waffle iron, 10 - 12 waffles can be made.
