The best jerk chicken wings you will ever try. They’re the perfect combination of sweet, spicy and savory.
Inspiration behind jerk chicken wings
So, my husband and I have been to the Bahamas twice in the last two months. One of the foods I that I really enjoyed were jerk chicken wings. We had them at this small spot in Nassau, and they were by far the best jerk wings I ever had. And, I’ve tried jerk wings from lots of different places. What made me appreciate these jerk wings, was the sweet, tangy, spicy and savory combination. I told my husband, I couldn’t wait to make these when we return to the states.
How to prepare
When preparing these wings, it is better to use drumettes and flats. I buy whole wings, and remove the tip, then separate the drum from the flat. If you are lucky enough to find wings already separated in the store, then by all means, get them.
Ingredients
For the wings, you will need:
- Seasoning salt – I’m old school, so it’s Lawry’s all day. But, you can use your favorite seasoning salt.
- Garlic powder
- Onion powder
- Jerk Seasoning – Some call it jerk marinade. I use Walkerswood, but Grace’s is another one I like. However any type will do.
- Brown sugar
For the sauce, you will need:
- Unsalted butter
- Ketchup
- Honey
- Brown Sugar
- Apple cider vinegar
- Jerk Seasoning
- Parsley
There are no major steps for this recipe. You are simply seasoning the chicken, placing them on a lined baking sheet, and baking them in a preheated oven. The best temperature to cook wings in the oven is 400 degrees. I’ve tried cooking wings on 375 degrees and 425 degrees, but 400 degrees produce the best results.
While the wings are cooking, you can prepare your sauce. I typically wait until the wings are almost ready, because I don’t want my sauce to separate. However, if the sauce does separate, it’s not a problem; just stir it, and it should be fine.
Toss the wings in the sauce, and you’re ready to serve.

Jerk Chicken Wings
Ingredients
- 3 – 4 lbs. chicken wings
- 1 1/2 tsp. seasoned salt
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 2 tbsp. jerk seasoning I use Grace's or Walker's Wood
- 1 tbsp. brown sugar
Jerk sauce
- 4 tbsp. unsalted butter
- 1/3 cup ketchup
- 1 tbsp honey
- 2 tbsp. brown sugar
- 1/4 cup jerk seasoning
- 1/4 cup apple cider vinegar
- 1 tbsp. parsley
Instructions
- Preheat oven to 400 degrees. If using whole wings, separate the drum from the flat using a knife.
- In a large bowl, season chicken wings with seasoned salt, onion powder, garlic powder, jerk seasoning and brown sugar. Use hand or large spatula to make sure all wings are coated.
- Place chicken wings on a parchment or foiled lined baking sheet. You can also lined the baking sheet with foil, and place an oven safe baking rack on top, and place the wings on the baking rack. Cook in preheated oven for 45 minutes.
- Heat a skillet over medium low or medium heat. Add butter, ketchup, honey, brown sugar, apple cider vinegar and jerk seasoning. Mix together and bring to a simmer, Simmer for 2 minutes, while stirring.
- Add wings to large bowl, along with sauce mixture. Toss until all wings are coated. Serve immediately with ranch or dressing of choice.
