After a long day of work or school, we want dinner to be quick and simple as possible. So, one pan meals like my pepper steak recipe is a very convenient choice. Outside of being delicious, it is also easy and quick to prepare.
What is Pepper Steak
Pepper steak is an Asian inspired dish made with thinly sliced steak with onions, bell peppers and a flavorful sauce. It is spicy, savory and has a hint of sweetness.
How to prepare
First, you will start by prepping your ingredients, which includes, slicing your steak, slicing your onion and bell peppers, and preparing your sauce.
The sauce
The sauce is probably the most important part of this dish. I say that because this is where all the flavor comes into play. The sauce is made with olive oil, soy sauce, sriracha, garlic powder, onion powder, crushed red pepper, dried parsley, brown sugar and a pinch of salt. You will use half of this mixture to marinate the steak, and the other half during the cooking process.
The veggies
The vegetables used in this dish are onion, bell pepper and garlic. I use red, green and orange bell pepper. However, if you only want to use one or two of these choices, that is fine as well. The veggies are cut into strips, and the garlic is minced or diced.
The steak
Start by slicing the steak, against the grain, into thin strips. The steak is then marinated in half of the prepared sauce for at least 15 minutes before it’s ready for the skillet.
I prefer to use flank steak because of it’s flavor and leanness. It also cooks quickly. Because the meat is lean and cooks fast, it can easily dry out. So, it is very important to not over-cook the steak. It only needs to be cooked for 2-3 minutes, about a minute on each side. It is also important to not crowd the skillet, as this will not produce a nice sear.
Cooking process
In a large skillet, you first cook the steak. Like I previously stated, no need to cook this cut of steak too long. Once you remove the steak, you will then sauté the garlic for a minute before adding the onion, bell pepper and remaining sauce mixture. Reduce the heat, then cover with a lid and simmer, stirring occasionally until veggies has reached your desired tenderness. Lastly, add the steak back to the skillet with the veggies and serve immediately
What to serve with pepper steak
My side dish of choice is white or brown rice. However, it is also great with potatoes.

Pepper Steak
Ingredients
- 1 1/2 – 2 lbs. flank steak cut into thin strips
- 1 red bell pepper sliced
- 1 green bell pepper sliced
- 1 orange bell pepper sliced
- 1 medium yellow onion sliced
- 3 garlic cloves minced or chopped, approximately 2 tablespoons
- 1/3 cup olive oil
- 1/2 cup low-sodium soy sauce
- 1/4 cup sriracha
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/4 tsp crushed red pepper flakes
- 2 tsp dried parsley
- 2 tbsp brown sugar
- pinch of sea salt
Instructions
- In a small bowl, whisk olive oil, soy sauce, sriracha, garlic powder, onion powder, red pepper flakes, parsley, brown sugar and salt.
- Add sliced steak to another bowl, and mix in 1/2 of sauce mixture. Mix until all steak slices are coated. Cover with plastic wrap, and let it sit for 15 minutes.
- Heat a large skillet over medium-high heat. Sear steak strips for 2 minutes on one side. then flip and sear on other side for 1 minute. The strips are thin, so do not overcook. Also, do not crowd skillet. Cook in batches if needed. Remove steak and let rest on a plate.
- Reduce heat to medium, and add garlic. Sauté garlic for 1 minute. Add onion and bell peppers to skillet, and stir in remaining sauce mixture. Reduce heat low, and cover. Simmer for 7 minutes, stirring occasionally, to prevent sticking. Cook vegetables less or longer depending on desired tenderness.
- Turn off heat and stir in cooked steak. Serve warm with side dish of choice. Rice or potatoes recommended.
