Ingredients

  • 2 lbs. wings drums and flats
  • 2 tsp. sea salt
  • 1 tsp. black pepper
  • 2 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder

Garlic butter sauce

  • 1/2 cup unsalted butter melted
  • 3 garlic cloves, minced about 1 tablespoon
  • 1/2 cup parmesan cheese, plus more for garnish
  • 1/2 tsp black pepper
  • pinch of salt
  • 1 tsp dried parsley, plus more for garnish

Parmesan dipping sauce

  • 1 cup mayo
  • 2 tsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • 2 garlic cloves, minced about teaspoons
  • 1/2 tsp black pepper
  • 1 tbsp water
  • 1/3 cup Freshly grated Parmesan cheese
  • salt if needed

Instructions

  • If using whole wings, separate the drums from the flats. Skip this step if wings are already separated.
  • Preheat oven to 400 degrees.
  • In large bowl, season wings with salt, pepper, onion powder, garlic powder, paprika and baking powder. Use your hand, or a large spoon to make sure all wings are thoroughly seasoned.
  • Line a baking sheet with aluminum foil, and place a wire rack on top. Place wings on rack and bake in oven for 45-minutes. Wings should be golden brown and crispy.
  • To make butter sauce, in a small bowl or measuring cup, add melted butter, minced garlic, black pepper, pinch of salt, parsley and parmesan cheese. Whisk until mixed. If butter starts to separate before you toss it in your wings, just whisk it again. Taste and more salt if needed.
  • Add wings to a large bowl and toss in butter sauce. Garnish with more parmesan cheese and optional parsley. Serve with parmesan dipping sauce or sauce of choice.

Parmesan dipping sauce

  • In a small bowl or measuring cup, add mayo, Dijon mustard, Worcestershire sauce, minced garlic, black pepper and parmesan cheese. Whisk until mixed. Add water and whisk again. If the consistency is still too thick, add more water until desired consistency is reached. Taste and add salt if needed.
