Country Breakfast Skillet

Ingredients
  

  • 1 lb ground pork sausage
  • 6 thick cut bacon slices
  • 1 chopped green bell pepper
  • 1 chopped red bell pepper
  • 1 chopped medium onion
  • 2 1/2 cups peeled, diced potatoes
  • 2 tsp garlic powder
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • salt & pepper to taste
  • fresh parsley for garnish (optional)

Instructions
 

  • Preheat oven to 400 degrees
  • Heat 10 inch skillet over medium high heat. Add crumbling sausage, breaking up while tossing. Cook thoroughly until brown; about 5 minutes.
  • Transfer sausage to plate lined with a paper towel.
  • Add bacon slices to skillet with sausage drippings. Cook bacon thoroughly; about 6 minutes.
  • Transfer bacon to plate with sausage.
  • Add bell peppers & onions to skillet with sausage and bacon drippings, and toss until fully coated with drippings and oil from meat. Cook for 3 - 4 minutes. This will also be a good time to chop your bacon into pieces.
  • Add potatoes to skillet with veggies and toss.
  • Add garlic powder and toss. Reduce heat to medium. Cover and cook for about 8 minutes stirring occasionally. Also, check texture of potatoes to ensure they aren't mushy. If you notice they cooking too quickly and turning into mush, turn heat off. taste veggies, and sprinkle with salt if needed. Do not over salt. Sausage and bacon holds a lot of sodium.
  • Add bacon and sausage to skillet and stir together.
  • Put 4 indentations in each corner of skillet, and crack an egg into each indentation.
  • Cook in preheated for 10 minutes.
  • Remove from oven. Sprinkle with cheese.
  • Return to oven for additional 2 minutes, or until cheese is melted.
  • Sprinkle with optional parsley, and enjoy.

Notes

After dicing potatoes, add to bowl of water and drain off moisture before cooking.  This will remove some of the starch, and prevent potatoes from browning too quickly.
Keep and eye on potatoes while cooking to ensure they don't stick or become mushy. If this happens, it means your heat is too high.
