Country Breakfast Skillet

I wanted something hearty with lots of flavor for breakfast, so I used ingredients I had on hand and decided to prepare this delicious skillet. It’s so good, and I have to share it with you.

I am overly obsessed with this breakfast skillet. It is made with potatoes, onions, peppers, sausage, bacon, eggs and cheese. I know it sounds like a lot, and it probably is to some of you, but these flavors together are undeniable. After all, who doesn’t enjoy potatoes, bacon and cheese? I personally feel like bacon and cheese is good on almost anything.

What is a breakfast skillet?

A breakfast skillet is a combination of potatoes, veggies, meat, eggs and cheese. I honestly feel there is no wrong way to prepare this. You can add or take away. If you don’t eat pork, or any kind of meat, you can always make this with veggies only.

Preparing a breakfast skillet:

This recipe is super easy. If you mess this up, then you have no business in the kitchen. Just kidding, lol. Just monitor your heat temperature of the skillet, and don’t overcook.

What makes this skillet delicious is the fact that everything is cooked in the drippings created by the sausage and bacon. The flavors from from the veggies, combined with the meat drippings is so rich that you will only need minimal salt; if any at all.

When it’s time to add the potatoes, you must cover and reduce the heat to keep it from sticking, and overcooking. Also, you don’t want to cook your potatoes too long because this will make them mushy. You want these potatoes to still have a slightly firm texture.

The final thing that sets this recipe off is the eggs and cheese. After you return the meat to skillet with the potatoes and veggies, create four indentations in each corner and crack and egg. You will then place in oven, and cook. Remove from oven, add cheese and cook until melted.

Ingredients
  

  • 1 lb ground pork sausage
  • 6 thick cut bacon slices
  • 1 chopped green bell pepper
  • 1 chopped red bell pepper
  • 1 chopped medium onion
  • 2 1/2 cups peeled, diced potatoes
  • 2 tsp garlic powder
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • salt & pepper to taste
  • fresh parsley for garnish (optional)

Instructions
 

  • Preheat oven to 400 degrees
  • Heat 10 inch skillet over medium high heat. Add crumbling sausage, breaking up while tossing. Cook thoroughly until brown; about 5 minutes.
  • Transfer sausage to plate lined with a paper towel.
  • Add bacon slices to skillet with sausage drippings. Cook bacon thoroughly; about 6 minutes.
  • Transfer bacon to plate with sausage.
  • Add bell peppers & onions to skillet with sausage and bacon drippings, and toss until fully coated with drippings and oil from meat. Cook for 3 – 4 minutes. This will also be a good time to chop your bacon into pieces.
  • Add potatoes to skillet with veggies and toss.
  • Add garlic powder and toss. Reduce heat to medium. Cover and cook for about 8 minutes stirring occasionally. Also, check texture of potatoes to ensure they aren't mushy. If you notice they cooking too quickly and turning into mush, turn heat off. taste veggies, and sprinkle with salt if needed. Do not over salt. Sausage and bacon holds a lot of sodium.
  • Add bacon and sausage to skillet and stir together.
  • Put 4 indentations in each corner of skillet, and crack an egg into each indentation.
  • Cook in preheated for 10 minutes.
  • Remove from oven. Sprinkle with cheese.
  • Return to oven for additional 2 minutes, or until cheese is melted.
  • Sprinkle with optional parsley, and enjoy.

Notes

After dicing potatoes, add to bowl of water and drain off moisture before cooking.  This will remove some of the starch, and prevent potatoes from browning too quickly.
Keep and eye on potatoes while cooking to ensure they don’t stick or become mushy. If this happens, it means your heat is too high.
