These are the best homemade pancakes you’ll ever prepare at home. They are are moist, fluffy and have the perfect crisp on the edges.

How to prepare the best homemade pancakes

Ingredients needed
  • All-purpose flour – gluten to provide texture to pancakes.
  • Baking powder – necessary leavening agent to ensure you have fluffy pancakes. Also, brings out those bubbles.
  • Salt – Who wants bland pancakes?
  • Granulated sugar – Sweetener to help balance the salt
  • Whole milk – This is needed to make your mix creamy. Low fat or fat free milk can be used as well.
  • Egg yolks – the glue that holds those fluffy pancakes together
  • Vanilla extract – adds a hint of vanilla flavor
  • Butter extract – while this ingredient is optional, I like to consider it a “secret ingredient”. It adds a delicious downhome flavor.
  • Melted butter – Brings out the great flavor in the pancake mix.
  • Egg whites – adds that extra bit of fluffiness.
Equipment need

I recommend a non-stick skillet, griddle or cast iron skillet or prepare these pancakes. Several pancakes can be prepared at once using a griddle. However, only one or two pancakes can be prepared at a time in the skillets.

Simple steps
  • Whisk together dry ingredients.
  • Whisk together egg yolks, milk and extracts.
  • Combine dry and wet ingredients together.
  • Stir in melted butter.
  • Whisk eggs whites until starts to get stiff and fold into mixture.
  • Heat oil in pan, and brown pancakes on each side. But, ensure you are not flipping until bubbles start to form on top.
Tips
  • How many pancakes – Depending on the size you want your pancakes, typically I will do 1/4 cup for a medium size pancake, and 1/2 cup scoop for a larger pancake. But, feel free to make yours whatever size you want.
  • If you are using a non-stick skillet, you can not butter the pan if you don’t want. However, be advised that you will not have crispy edges if you skip greasing the pan.
  • How to keep warm – Place pancakes on a wire rack on baking sheet, then place in a 200 degree oven to keep warm while you finish preparing red of pancakes..

Ingredients
  

  • 2 cups all-purpose flour
  • 3 1/2 tsp. baking powder
  • 1 tsp. salt
  • 3 tbsp. granulated sugar
  • 2 eggs, whites separated from yolks
  • 2 cups whole milk
  • 1 tsp. vanilla extract
  • 1 tsp. butter extract optional
  • 1/4 cup unsalted butter, melted
  • unsalted butter for skillet or griddle

Instructions
 

  • In a large bowl, whisk together flour, baking powder, salt and sugar. In a large measuring cup (4 cups or larger) or a medium bowl, whisk milk, egg yolks, vanilla and butter extract together.
  • Make a well in the center of flour mixture and pour in the milk and egg mixture. Whisk until smooth. Whisk in melted butter. In a small bowl, whisk egg whites until they begin to stiffen. Fold egg whites into mixture.
  • Heat skillet over medium low heat. Add a small amount of butter to skillet. Pour or scoop the batter onto the skillet or griddle. I typically do 1/4 or 1/2 cup, depending on how big I want them.
  • When bubbles start to form, and bottom is slightly golden brown, carefully flip pancakes and brown the top. Repeat until all batter is used.
  • Serve hot with butter and maple syrup.
