Strawberry Pancakes

My love for pancakes and strawberries gave me the opportunity to combine two of my favorite things, so here I am introducing my delightful strawberry pancakes.

When I was growing up, getting up on a Saturday morning, and having breakfast with my family was something I always loved and looked forward to. Whether we went to a restaurant, or stayed home and enjoyed one of mom’s fabulous meals, I would always have pancakes. When it comes to breakfast food, pancakes are at the top of the list as being a favorite of mine.

This recipe was born because I not only have a love for pancakes, but for strawberries as well. My love for pancakes and strawberries gave me the opportunity to combine two of my favorite things, so here I am introducing my delightful strawberry pancakes.

What are Strawberry Pancakes

Strawberry pancakes are a stack of buttermilk pancakes, drizzled with strawberry syrup made of fresh strawberries, and topped with homemade whipped cream.

Preparing Strawberry Pancakes

Ingredients you will need for pancakes

  • All-purpose flour
  • Granulated sugar
  • Salt
  • Baking powder and baking soda
  • Buttermilk
  • Vanilla extract
  • Vegetable oil
  • Eggs
  • Butter
  • Fresh Strawberries (diced)

Ingredients for strawberry syrup

  • Granulated sugar
  • Fresh strawberries (chopped)

Ingredients for whipped cream

  • Heavy cream
  • Confectioners sugar
  • Vanilla extract

How to make strawberry pancakes

  • Make strawberry syrup by heating strawberries and granulated sugar over medium heat, and reducing once staring to thicken and form syrup.
  • Make whipped topping by mixing heavy cream, vanilla and confectioners sugar with an electric mixer.
  • Preheat a griddle or non-stick skillet over medium heat.
  • In a bowl, mix dry ingredients.
  • In a separate bowl, mix milk, vanilla extract, oil and egg. Whisk well.
  • Pour wet ingredients into bowl with dry ingredients. Mix well.
  • Fold in chopped strawberries.
  • Pour pancake batter unto preheated griddle.
  • Cook on both sides until pancakes are brown.
  • Serve immediately with prepared strawberry syrup and homemade whipped cream.

What to Serve with Strawberry pancakes

These pancakes are very filling, and can be enjoyed alone. However, eggs, sausage or bacon go great with this delicious dish.

Ingredients
  

Pancakes

  • 2 cups all-purpose flour
  • 3 tbsp granulated sugar
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 cups buttermilk
  • 1 tsp vanilla extract
  • 2 tbsp vegetable oil
  • 2 large eggs, beaten
  • 1 cup fresh strawberries, finely chopped
  • vegetable oil and butter for griddle or skillet

Strawberry Syrup

  • 3 cups fresh strawberries, diced
  • 1 cup granulated sugar

Whipped Cream Topping

  • 1 cup heavy cream
  • 1/2 cup confectioners sugar
  • 1 tsp vanilla extract

Instructions
 

  • In a small sauce pan, bring strawberries and granulated sugar to boil over medium high heat. Stir until sugar is thoroughly mixed with strawberries When mixture starts to simmer and thicken, reduce heat to low and cover while you prepare pancakes.
  • Preheat griddle or skillet over medium heat.
  • In a large mixing bowl whisk together flour, sugar, baking powder, baking soda and salt for about 15 – 20 seconds.
  • In another small or medium mixing bowl, whisk together buttermilk, oil, vanilla and eggs until blended.
  • Pour buttermilk mixture into bowl with dry ingredients and whisk thoroughly until no lumps appear. Fold in chopped strawberries.
  • In a small bowl, using an electric hand mixer, mix cream, vanilla and confectioners sugar until stiff peaks are formed. Do not over mix.
  • Grease griddle with oil and butter. Only put butter in area you will be cooking pancakes. Pour about 1/3 of batter onto griddle. Cook until you see small bubbles appear, then flip and cook on opposite side until brown. Repeat until you've used all batter.
  • Serve immediately with warm strawberry syrup and whipped cream topping.
