Blackened Chicken Sandwich

This Blackened Chicken Sandwich is made with juicy chicken breast, seasoned to perfection with blackened seasoning. It’s served on a brioche bun with pepper jack cheese, bacon, red onion, lettuce, tomato and homemade garlic aioli.

What is a blackened chicken sandwich?

A blackened chicken sandwich is made with a tender, juicy chicken breast that is seasoned to perfection with my homemade blackened seasoning. While, you can serve it with whatever toppings you want, this sandwich is delicious on a brioche bun with pepper jack cheese, bacon, red onion, lettuce, tomato. But, the homemade garlic aioli is what really sets this sandwich off.

What makes it “blackened”?

Blackening is a way of cooking where you season meat generously with a seasoning, consisting of herbs and spices, on both sides. You will then sear the meat in a cast iron skillet over medium-high to high heat. Once done, the meat with have a charred look.

MHow to prepare

The first step to preparing a blackened sandwich is to take one boneless, skinless chicken breast and cut it into two cutlets, by slicing it horizontally and evenly through the center. You can also use this video from J. Kenji as reference.

Next, you will season the cutlets on both sides with blackened seasoning. You can use my homemade recipe, but you can also use a store-bought brand. While seasoning, it is important to make sure that each piece is generously coated on both sides.

Heat up a cast iron skillet over medium-high to high heat. Add oil and butter and cook each cutlet on both sides until the internal temperature is 165 degrees, and the outside is charred.

The Bread

I use brioche buns. However, after making this sandwich quite a few times, I was not able to find brioche buns on a particular grocery store trip. That time, I opted for Texas toast. I was delicious, and was the perfect substitution. I still prefer a brioche bun though.

Toppings:
  • Pepper Jack cheese
  • Bacon
  • Lettuce
  • Tomato
  • Red Onion
  • Garlic aioli

These are my favorite topping to use, but feel free to omit or add what you want.

Substitution for toppings:
  • Pepper Jack Cheese – Cheddar, Swiss, Monterey Jack
  • Lettuce – Spinach, Arugula
  • Red onion – Yellow Onion
  • Garlic aioli – Mayo, Ranch Dressing

Equipment

  • 1 10 – 12 inch cast iron skillet

Ingredients
  

  • 1 boneless, skinless chicken breast cut lengthwise into two cutlets
  • 1 recipe for blackened seasoning store-bought can be used as a substitute
  • 1 tbsp. grapeseed oil
  • 1 tbsp. unsalted butter
  • brioche buns

Toppings

Instructions
 

  • If using bacon, go ahead and cook.
  • Pat chicken dry with paper towels, and ensure it is free of moisture. Season chicken on both sides with blackened seasoning. Rub seasoning into chicken until both sides is fully coated.
  • Heat a cast iron skillet over medium-high heat. Add oil and butter. Once hot, add chicken. Cook chicken for 3-5 minutes on each side until an internal temperature of 165 degree is reached.
  • Let chicken rest on plate or cutting board for at least 5 minutes.
  • Serve on bun with toppings of choice.

Notes

  • Wait for cast iron to get hot before adding chicken.
  • Once chicken is added, do not touch chicken until time to flip.
