Salmon BLT w/ Lemon Dill Mayo
Salmon, bacon, lettuce and tomato on Ciabatta bread with lemon dill mayo.

- 2 6-8 oz salmon fillet, skinless
- 4 strips of bacon
- 4 tomato slices
- Romaine lettuce
- Ciabatta bread
- garlic powder
- onion powder
- salt & pepper
- 2 tbsp unsalted butter
- 2 tbsp vegetable oil
Lemon Dill Mayo
- 1/2 cup mayo
- 2 tbsp fresh dill, chopped
- juice from one lemon
In a small bowl, whisk mayo, dill and lemon to prepare mayo.
Season salmon on both sides with salt, pepper, onion and garlic powder.
Cook Bacon according to package instructions. I like to cook my bacon in the oven on 425 degrees for 10 minutes, but it can be cooked however you like it.
Heat oil and butter in a skillet over medium-high heat. Add salmon and cook for 5 minutes on each side. Remove from skillet and let rest on a plate for 5 minutes.
Serve on Ciabatta bread with lemon dill mayo, lettuce, tomato and bacon.
A non-stick pan is not required, but it is recommended.
This recipe can be doubled to prepare more sandwiches.
