Salmon & Shrimp w/Cajun Cream Sauce

Seafood is always a great choice when you’re trying to decide what you want for brunch, lunch or dinner. When paired with cajun flavors, it’s definitely a winner. Well, my salmon and shrimp with cajun cream sauce highlights them both. This dish is made with salmon and shrimp, then topped with a sauce made with spinach, mushrooms, cream and cajun spices.

How to prepare

This dish is very easy to prepare, and can be prepared in as little as twenty minutes. It doesn’t require much prep work. In fact, the only prepping that needs to be done is simply gathering your ingredients, and seasoning the salmon and shrimp. It’s best to buy your mushrooms pre-sliced. This way, you can save time by not having to slice them on your own.

The key element to this dish is the sauce. The sauce is made of unsalted butter, heavy cream, chicken broth, sherry wine, mushrooms, spinach, smoked paprika and cajun seasoning. And let’s not forget, the pepper jack cheese that gives it an extra level of kick.

First, you will season your shrimp and salmon. When I prepare this dish, I typically use a store-bought poultry and/or fish seasoning. However, you can also make your own seasoning consisting of salt, pepper, garlic and onion powder.

Next, you will start your sauce by heating butter over medium heat, then sauteing your mushrooms. Add your seasoning, cream, broth and wine. You will bring it to a simmer for 10 minutes, then add your spinach and cheese. Another good thing is the fact that while your sauce is cooking, you can prepare your salmon and shrimp. It doesn’t take seafood long to cook, so you will have the perfect dinner in 20 minutes.

Other options

If you’re not a fan of salmon, this dish can be prepared with another fish like catfish, grouper, mahi or halibut. I’m not a fan of tilapia, but if you are, then by all means that can be used as well. Also, if you don’t want fish, you can simply make this dish with only shrimp.

What to serve with this dish

This dish goes great with potatoes. You can make mashed potatoes or a baked potato. Also, rice or pasta are other great options. The best vegetables are basically any type of sauteed or steamed vegetable. My personal favorite is asparagus. It is the perfect match with the sauce.

Ingredients
  

  • 5 tbsp unsalted butter
  • 1 cup sliced white mushrooms
  • 2 cups fresh spinach
  • 1 tbsp all-purpose flour
  • 2 tsp cajun seasoning preferably Old Bay
  • 1 tsp smoked paprika
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup sherry wine
  • 1 cup pepper jack cheese shredded

Salmon and shrimp

  • 4 6-8 oz salmon fillets, skinless
  • 1 lb jumbo shrimp
  • seasoning of choice for salmon and shrimp I recommend poultry and fish seasoning. But salt, pepper, garlic powder and onion powder can be used.
  • 2 tbsp unsalted butter for skillet
  • 1 tbsp vegetable oil

Instructions
 

  • Heat 5 tbsp of butter in a large skillet over medium heat. Add mushrooms and saute for 3 minutes. Stir in flour, and continue to stir until flour has become creamy. Stir in cajun seasoning and stir until everything is thoroughly mixed.
  • Add heavy cream, chicken broth, sherry wine and smoked paprika. Stir together and bring to a hard simmer. Reduce heat to low, and let simmer for 10 minutes, stirring occasionally.
  • Season salmon on both sides with seasoning. In a small bowl, season shrimp with the same seasoning.
  • In another skillet, heat 1 tbsp of butter and 2 tbsp vegetable oil over medium to medium-high heat. Cook salmon fillets for 4 minutes on each side. Remove salmon and set aside on a plate. Add shrimp to same skillet and cook for 3 minutes on each side. Do not overcook shrimp.
  • Remove lid from sauce, and add pepper jack cheese. Stir until cheese is melted. Add spinach and stir until spinach is wilted.
  • Serve immediately on top of salmon and shrimp with sides of choice. Mashed potatoes and asparagus are recommended.
