Blueberry Waffles

Sweetened and fluffy waffles, packed with blueberries. These blueberry waffles will complete any breakfast or brunch menu.

How to prepare Blueberry Waffles

Ingredients:
  • All-purpose flour
  • Salt
  • Granulated sugar
  • Baking powder
  • Whole milk
  • Egg
  • Vanilla extract
  • Fresh blueberries
  • Melted butter
Simple Steps

Pre-heat waffle iron.

Combine all dry ingredients and whisk together.

Add milk and egg, then whisk together until batter is smooth. Then, stir in melted butter and vanilla.

Fold in blueberries.

Scoop batter, and pour onto waffle iron.

Cook waffles for 3 – 5 minutes, until waffles are golden brown.

Serve these waffles with toppings of choice. I like to serve these waffles, topped with powdered sugar, butter and maple syrup. Honey is also a good option, instead of the syrup.

Tips and substitutions

  • Frozen blueberries can be used in place of fresh.  If using frozen, let them thaw before folding into batter.
  • Do not put too much batter into waffle iron, as it will start to run over once waffles begin to cook
  • The blueberries will start to pop during the cooking process, so make sure to keep an eye on the waffle iron for blueberries running out.  Cleaning as you go, will make clean-up a lot easier at the end.
  • I use butter flavored non-stick spray for the best flavor. If not using butter, then use vegetable or canola.
  • This recipe makes between 6 – 8 Belgian waffles. If using a standard size waffle iron, 10 – 12 waffles can

What to serve with blueberry waffles

  • Fried chicken is one of my favorite things to eat with blueberry waffles. If you think fried chicken is good with regular waffles, wait until you try fried chicken with blueberry waffles.
  • You can never go wrong with your favorite breakfast meats like bacon, sausage or ham
  • Eggs, hash browns and grits also pairs well.

Ingredients
  

  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1/3 cup granulated sugar
  • 3 1/2 tsp baking powder
  • 2 cups whole milk
  • 1 egg
  • 1 tsp vanilla extract
  • 1/3 cup melted butter
  • 1 cup fresh blueberries
  • non-stick cooking spray I use butter flavor
  • powdered sugar for garnishment optional

Instructions
 

  • Turn on waffle iron and heat until ready to cook waffles.
  • In a large bowl, whisk together flour, salt, sugar and baking powder. Make a well in the center of the mixture and pour in milk and add egg. Whisk all ingredients together, until mixture is free of visible lumps. Whisk in vanilla extract and melted butter. Lastly, fold in the blueberries.
  • Spray top and bottom of waffle iron with non-stick cooking spray. Scoop batter out and pour onto waffle iron. Cook waffles for 3 – minutes, until golden brown. Repeat until all waffles are made. With my Belgian waffle iron, I can typically get between 6 – 8 waffles. Serve warm with powdered sugar and/or other toppings of choice.
